With mother’s day approaching, we thought we would share our favourite breakfast recipes handed down to us by our mothers that are the perfect way to treat your mum to an indulgent and delicious breakfast in bed with this Sunday. One of the most luxurious breakfast recipes to whip up is this grilled avocado, poached egg and salmon recipe shared with us by Fleur girl Alice. The perfect opportunity to create something lavish and delicious, it is surprisingly simple to make and only takes ten minutes to prepare. Heat a griddle pan over a high heat. Brush the cut sides of the avocado with the oil and griddle for 2 minutes, until lines appear. Turn off the heat and turn the avocado halves skin side down to keep warm while you poach the egg.
Bring a small pan of water to a bubbling boil. Turn down the heat as low as it will go and swirl the water to create a whirlpool. Break the egg into a ramekin and pour into the centre of the whirlpool. Poach for 3 minutes for a runny yolk.
Arrange the avocado halves on a plate with the poached egg and smoked salmon, squeeze over some lemon juice and grind over black pepper to serve.
Fleur tip : Serve with orange and mango mimosa for a sparkling indulgent treat.
A warm stack of fluffy and delicious pancakes are also a perfect way to start the day and we love these banana, walnut and blueberry pancakes drizzled with raspberry compote that Fleur's Mum used to make for her when she was little.
Mash two ripe bananas in to a bowl, along with two eggs. Stir until smooth and then add a pinch of baking powder, and tablespoon of crushed walnuts.
Pour mixture in to a frying pan and heat until golden brown. Serve with fresh blueberries and raspberry compote.
Fleur tip : For an indulgent treat add a sprinkling of caster sugar and a fresh sprig of mint.
